Broccoli  

This recipe for cooking broccoli in the microwave could be done in a steamer, but the florets would be wetter. 
 
Serves: 4
Prep Time: 10 minutes
Cook Time: 3 1/2 to 6 minutes
 
Ingredients:
1/2 cup chicken stock, homemade or Swanson's Low-Sodium
1/4 cup chopped green onions
1 clove garlic, sliced
1 head broccoli (about 1½ pounds), florets cut off with 2-inch stems
Kosher salt and freshly ground black pepper
Herbs of your choice.  The Little Italy New York Style Herbs work well.
 
Directions:
Combine the stock, green onions and garlic in a microwaveable bowl.  Stand the florets up in it, loosely forming them back into the head shape.  Cover lightly with plastic wrap and microwave according to your machine's directions. (3 1/2 to 6 minutes)  Under-cooking is far preferable to overcooking.  When done, toss the broccoli in the hot stock, season to taste, and serve.

The recipe can be made, cooled, covered, and refrigerated to use in other dishes or in a salad.  It will keep refrigerated for up to 2 days.
