Roasted Turkey and Vegetable Soup

This is easy to half or double as needed for your groups' size.  Also know that seasoning is to your taste, add more of what you like and less of what you don't.  It also freezes well. 
 
 

Serves 8-10
Prep Time: 20 minutes
Cook Time: 35-40 minutes
 
Ingredients:
 
4 quarts water (2 quarts of water and 2 quarts turkey stock)
1/3 cup chicken base
3 cups cubed leftover turkey
2-3 cups chopped celery
2 small onions
2 cups chopped carrots
1/3 chopped red bell pepper
1/2 tsp pepper
1-2 tsp poultry seasoning
1-2 tsp ground sage
salt to taste
 
Directions:
 
Place liquid in a large pot, add chicken base and stir well.  Add vegetables and turn to medium heat, bringing to a boil.  Turn down to simmer for 30 minutes.  Add seasoning and bring back to boil.  Add turkey and cook for 5-10 more minutes.
