Prep Time: 10 min Cook Time: 15 min Ingredients:
1/2 cup onion, sliced thin
1/2 cup green peppers, sliced thin 1/2 cup red peppers, sliced thin 1 tblsp olive oil 2 cups lean deli roast beef (Boar's Head recommended) 3-5 cups mixed greens 1/2 cup low-fat provolone cheese Directions:
Heat oil in a skillet, add onions and peppers, cook 5-7 minutes (until soft).
Add roast beef and heat through, add to salad greens and garnish with cheese.
