Fat-Free Raspberry-Orange Vinaigrette

This is a super way to enjoy the flavor of fruit without eating a lot of it.

Makes: about 2 cups 
Prep Time: 10 minutes
Refrigerate Time: 1 hour 
 
Ingredients:

3 tablespoons frozen orange juice concentrate
2 teaspoons Dijon mustard
2 teaspoons minced garlic
1 tablespoon chopped fresh tarragon or 1 teaspoon dried
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup raspberry vinegar
1 tablespoon fresh lime juice
1 cup water
 
Directions:
 
Whisk together the orange juice concentrate, mustard, garlic, tarragon, salt and pepper.  Whisk in the vinegar, lime juice and water.  Refrigerate and let the flavors combine for at least 1 hour before serving.
