Cucumber and Smoked Salmon Sandwiches

Don't peel the cucumber; the peel helps hold it together.
Serves: 1 Prep Time: 15 minutes Ingredients
3 tablespoons low-fat whipped cream cheese with chives
4 slices hothouse (seedless) cucumber, cut into bias 2 ounces smoked salmon Chopped fresh dill (optional) Directions
Spread the cream cheese on 2 of the cucumber slices. Divide the smoked salmon
between these slices and, if using, sprinkle with dill. Cover with the remaining
slices of cucumber and serve.
