Chimmichurri Chicken


Serves: 2
Prep Time:5 minutes
Cook Time: 10 to 13 minutes
 
Ingredients:
 
2 boneless, skinless chicken breasts
Ms. Dash seasoning
1 bunch fresh parsley
8 cloves garlic (minced)
1/2 cup EVOO
1/4 cup red wine vinegar
1 lemon wedge juice
1 tbsp diced red onion
1 tsp black pepper
dash of lime juice
pinch of salt - DO NOT ADD TOO MUCH!!

 
Directions:
 
In a processor, pulse the parsley until chopped up. Add garlic, EVOO, vinegar, lemon juice, lime juice, onion, s&p and blend. If the consistency is a little thick, add a little more EVOO and lemon juice and blend again until fairly smooth.
Now, you can bake or grill or broil your chicken, but this is how I do mine:
In a oven safe sauté pan, brown 2 boneless, skinless chicken breasts with cooking spray. Add a little pepper, Ms. Dash seasoning, and a sprinkle of lemon juice. Sauté on burner until browned, then spoon a tablespoon of your beautiful green chimmichurri mixture on top of each chicken breast and stick entire pan in the oven on broil for about 10-13 minutes. When done, and yummy sizzling, remove from oven and serve. Add another teaspoon of the chimmichurri to your plate for added flavor dipping.
You will notice that you have a lot of chimmichurri left over, perfect for your steaks tomorrow night for dinner! Cheers!
